Ingredients
8 oz wheel of brie, cut into 1-inch cubes
1/2 cup shelled pistachios, finely chopped
2 tbsp flour
1 egg, beaten
1 tbsp milk
2 tbsp honey
2 tbsp raspberry preserves or jam
1 tbsp water
1 tbsp olive oil
Fresh thyme or mint leaves, for garnish
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a shallow bowl, mix the chopped pistachios with flour.
3. In another bowl, whisk together egg and milk.
4. Dip each brie cube into the egg mixture, then coat with the pistachio mixture, pressing gently to adhere.
5. Place coated brie bites on the prepared baking sheet.
6. Drizzle lightly with olive oil and bake for 8–10 minutes, until golden and just starting to melt.
7. While baking, combine honey, raspberry preserves, and water in a small saucepan over low heat.
8. Stir until smooth and slightly thickened, about 3 minutes.
9. Remove brie bites from oven, let cool for 2–3 minutes, then drizzle with raspberry honey glaze.
10. Garnish with thyme or mint and serve warm.
Notes
You can air-fry the brie bites at 375°F for 5–6 minutes for an extra-crispy crust.
Use crushed almonds or pecans instead of pistachios for variation.
Pairs beautifully with sparkling rosé or champagne for an elegant touch.
