Description
An impressive dessert featuring soft pistachio sponge paired with tangy Meyer lemon mousse and a glossy citrus mirror glaze for a delightful treat.
Ingredients

- 1 cup finely ground pistachios
- 1/2 cup almond flour
- 1/2 cup sugar
- 3 eggs
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 1/2 cup fresh Meyer lemon juice
- 1 tbsp lemon zest
- 1/2 cup sugar
- 2 egg yolks
- 1 tsp gelatin (bloomed)
- 1 cup heavy whipping cream
- 1/2 cup water
- 1/2 cup sugar
- 1/2 cup white chocolate
- 1 tbsp gelatin (bloomed)
- Yellow gel food coloring
- Chopped pistachios (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the 3 eggs and 1/2 cup sugar until pale and fluffy.
- Fold in the 1 cup of finely ground pistachios and 1/2 cup of almond flour.
- Stir in the 1/4 cup of melted butter and 1 tsp of vanilla extract.
- Prepare round molds by greasing them lightly.
- Spoon the batter into the molds, filling them about 2/3 full.
- Bake for 15–18 minutes, checking for doneness with a toothpick.
- Remove from the oven and let them cool completely.
- Combine the 1/2 cup fresh Meyer lemon juice, 1 tbsp lemon zest, 1/2 cup sugar, and 2 egg yolks in a saucepan.
- Heat until it thickens, stirring constantly.
- Stir in 1 tsp of bloomed gelatin until dissolved.
- Whip 1 cup of heavy whipping cream to soft peaks and fold into the lemon mixture.
- Pipe the lemon mousse over the cooled sponge bases.
- Freeze until firm, about 2–3 hours.
- Combine 1/2 cup water, 1/2 cup sugar, and 1/2 cup white chocolate in a saucepan, heating until smooth.
- Add 1 tbsp of bloomed gelatin and stir until dissolved.
- Cool to about 90°F before glazing.
- Pour the glaze over the sponge domes and allow excess to drip off.
- Transfer the glazed domes to a serving plate and garnish with chopped pistachios.
Notes
Serve chilled, and consider adding whipped cream or fresh fruit for garnish. Store in an airtight container in the fridge for up to 2 days.
