Juicy, tender Instant Pot Rotisserie Chicken ready in under 45 minutes with a golden finish.
Ingredients
1 whole chicken (3–4 lbs)
2 tbsp olive oil
2 tsp paprika
2 tsp garlic powder
2 tsp onion powder
1 tsp thyme
1 tsp rosemary
1 tsp salt
½ tsp pepper
1 lemon, halved
4 garlic cloves
1 cup chicken broth
Instructions
1. Pat chicken dry and season with oil and rub.
2. Stuff cavity with lemon and garlic.
3. Sear in Instant Pot 5 min each side.
4. Place on trivet, add broth.
5. Pressure cook on High 25 min.
6. Natural release 10 min.
7. Check internal temp (165°F).
8. Rest 10 min, broil 5 min for crispy skin.
Notes
Broil at the end for crispy skin.
Refrigerate leftovers up to 3 days.
Freeze shredded meat up to 3 months.
