Ingredients

34 large sweet potatoes, thinly sliced

1 cup heavy cream

1 cup whole milk

2 cloves garlic, minced

1 tsp salt

1/2 tsp black pepper

1 tsp fresh sage, finely chopped

1 cup shredded Gruyère or Parmesan cheese

2 tbsp butter (for greasing)


Instructions

1. Preheat oven to 375°F (190°C).

2. Grease a baking dish with butter.

3. Warm cream, milk, garlic, sage, salt, and pepper in a saucepan (do not boil).

4. Layer sweet potato slices in the dish, pouring some cream mixture over each layer.

5. Repeat until all potatoes and cream are used.

6. Sprinkle cheese over the top.

7. Cover with foil and bake 35 minutes.

8. Uncover and bake 15–20 more minutes until golden and bubbly.

9. Let cool 10 minutes before serving.

Notes

Swap sage with thyme for a lighter flavor.

Gruyère, Parmesan, or mozzarella all work.

Slice potatoes evenly for the best texture.
