Description
Moist, spiced, and nourishing pumpkin bars perfect for snacks or dessert.
Ingredients
1 cup pumpkin puree
2 eggs (or flax eggs)
1/2 cup coconut sugar
1/4 cup olive oil
1 tsp vanilla
1 cup whole wheat flour
1/2 cup rolled oats
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/4 tsp cloves
Optional: dark chocolate chips, nuts
Instructions
1. Preheat oven to 350°F (175°C).
2. Line baking pan with parchment.
3. Mix dry ingredients.
4. Whisk wet ingredients until smooth.
5. Combine wet and dry mixtures.
6. Fold in add-ins.
7. Spread batter in pan.
8. Bake 25–30 minutes.
9. Cool, then slice.
Notes
For gluten-free, use oat flour.
For vegan, use flax eggs.
Freeze for up to 2 months.
