These Pumpkin Delight Cookies are soft, spiced, and melt-in-your-mouth delicious. Packed with pumpkin purée and warm spices, they bring all the cozy autumn vibes to your kitchen perfect with a cup of coffee or hot cocoa!
Ingredients
1 cup unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
1 cup pumpkin purée (not pumpkin pie filling)
1 large egg
2 tsp vanilla extract
2½ cups all-purpose flour
1½ tsp baking powder
½ tsp baking soda
1½ tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp ground cloves
¼ tsp salt
Optional mix-ins: 1 cup white chocolate chips, pecans, or toffee bits
Instructions
1. Set oven to 350°F (175°C) and line two baking sheets with parchment paper.
2. In a large bowl, beat the butter, brown sugar, and granulated sugar together until light and fluffy — about 2–3 minutes.
3. Mix in the pumpkin purée, egg, and vanilla extract until smooth and well combined.
4. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
5. Gradually add the dry ingredients to the wet mixture. Stir just until combined. Fold in optional mix-ins like white chocolate chips or pecans.
6. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing about 2 inches apart. Bake for 11–13 minutes, until edges are set but centers are soft.
7. Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack. Enjoy warm or at room temperature.
Notes
Use pure pumpkin purée, not pumpkin pie filling.
Chill the dough for 30 minutes for thicker, chewier cookies.
White chocolate chips add sweetness; pecans give a nutty crunch.
Store in an airtight container for up to 5 days or freeze up to 2 months.
