Description

These Pumpkin Spice Latte Tacos are a fun and festive fall-inspired dessert taco  filled with creamy pumpkin spice latte mousse, topped with whipped cream, and sprinkled with cinnamon sugar for cozy coffeehouse flavor in every bite.


Ingredients

6 small flour tortillas

2 tbsp butter, melted

2 tbsp granulated sugar

1 tsp cinnamon

Pumpkin Spice Latte Filling:

1 cup heavy whipping cream

4 oz cream cheese, softened

1/2 cup pumpkin purée

1/4 cup powdered sugar

1 tsp instant coffee or espresso powder

1 tsp pumpkin pie spice

1/2 tsp vanilla extract

Toppings:

Whipped cream

Caramel drizzle

Extra cinnamon or nutmeg for garnish


Instructions

1. Preheat oven to 375°F (190°C).

2. Brush both sides of each tortilla with melted butter, then sprinkle with cinnamon sugar.

3. Drape tortillas over the rungs of an upside-down muffin tin to form taco shapes.

4. Bake 10–12 minutes until crisp and golden. Let cool completely.

5. In a bowl, beat heavy cream to stiff peaks and set aside.

6. In another bowl, beat cream cheese, pumpkin purée, powdered sugar, espresso powder, pumpkin pie spice, and vanilla until smooth.

7. Fold whipped cream into the pumpkin mixture until fluffy and combined.

8. Spoon or pipe filling into cooled taco shells.

9. Top with whipped cream, caramel drizzle, and a dusting of cinnamon.

10. Serve immediately or chill before serving for a firmer texture.

Notes

For a stronger coffee flavor, increase espresso powder to 2 teaspoons.

Use mini tortillas for bite-sized dessert tacos.

Store leftover filling in the refrigerator for up to 2 days — it also makes a great dip for cookies or fruit.
