Ingredients
1 cup unsalted butter, softened
1 cup brown sugar
½ cup granulated sugar
1 large egg
1 tsp vanilla extract
1 cup pumpkin puree
2 ½ cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
1 tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp ground cloves
¼ tsp salt
½ cup espresso or strong coffee, cooled
¼ cup coffee liqueur (optional)
1 cup cream cheese, softened
2 cups powdered sugar
½ tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Line cookie sheets with parchment paper.
2. In a large bowl, cream together butter, brown sugar, and granulated sugar until fluffy. Add egg, vanilla, and pumpkin puree, mixing until combined.
3. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
4. Gradually add dry ingredients to the wet mixture until just combined.
5. Drop tablespoons of dough onto prepared baking sheets, spacing 2 inches apart. Bake 12–15 minutes, until edges are lightly golden. Let cool completely.
6. Whisk together cream cheese, powdered sugar, vanilla, espresso, and coffee liqueur (if using) until smooth.
7. Spread a layer of tiramisu glaze on one cookie and sandwich with another. Dust with cocoa powder if desired.
