- 4 ounces chèvre goat cheese
- 1 tablespoon fresh dill, roughly minced
- 1 tablespoon fresh mint, roughly minced
- ½ cup extra virgin olive oil
- 2 tablespoons champagne vinegar
- 1 teaspoon lemon juice
- ¼ teaspoon salt
- Pepper to taste
Instructions
- Prepare the vinaigrette: In a small bowl, combine olive oil, champagne vinegar, lemon juice, and salt. Whisk together until fully blended and slightly creamy. Season with pepper to taste.
- Assemble the salad: In a large bowl, add the mixed spring greens, quartered radishes, quartered cucumber, halved grapes, blueberries, and sliced avocado. Gently toss to combine.
