- 1 cup vegetable oil
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon cocoa powder
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 cup cream cheese frosting
Instructions
- Preheat your oven to 350°F (175°C) and grease a bundt pan.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the oil, buttermilk, eggs, food coloring, vanilla, and cocoa powder until combined.
- Gradually add the wet ingredients to the dry ingredients and mix until just combined.
- Pour half of the batter into the bundt pan.
- In a small bowl, combine softened cream cheese and powdered sugar, then dollop this mixture on top of the batter in the pan.
- Top with the remaining batter.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Allow the cake to cool for 10 minutes before inverting onto a wire rack.
- Once cool, top with cream cheese frosting.
Notes
Ensure all ingredients are at room temperature. Do not overmix the batter.
