Ingredients

  • 1 3/4 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon cocoa powder
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup cream cheese frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bundt pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the oil, buttermilk, eggs, food coloring, vanilla, and cocoa powder until combined.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. Pour half of the batter into the bundt pan.
  6. In a small bowl, combine softened cream cheese and powdered sugar, then dollop this mixture on top of the batter in the pan.
  7. Top with the remaining batter.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Allow the cake to cool for 10 minutes before inverting onto a wire rack.
  10. Once cool, top with cream cheese frosting.

Ensure all ingredients are at room temperature. Do not overmix the batter.
