Ingredients
1 box red velvet cake mix (about 15.25 oz)
2 large eggs
1/3 cup vegetable oil (or melted butter)
1 tsp vanilla extract
1/2 cup white chocolate chips (optional)
Powdered sugar for dusting (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine red velvet cake mix, eggs, oil, and vanilla extract.
3. Stir until a thick dough forms.
4. Fold in white chocolate chips, if using.
5. Scoop tablespoon-sized balls of dough and place them on the prepared baking sheet, about 2 inches apart.
6. Optional: Roll each ball lightly in powdered sugar for a crinkle effect.
7. Bake for 9–11 minutes, or until edges are set and centers are soft.
8. Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack.
