Description

Ingredients

  • 4 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the chopped rhubarb, granulated sugar, cornstarch, and vanilla extract in a mixing bowl.
  3. Pour the rhubarb mixture into a greased 9×13 inch baking dish.
  4. Mix together the rolled oats, all-purpose flour, brown sugar, melted butter, cinnamon, and salt in another bowl.
  5. Sprinkle the topping evenly over the rhubarb mixture.
  6. Bake for 30-35 minutes until the topping is golden brown.
  7. Cool slightly before serving.
