Description
A beautiful holiday salad featuring roasted beets, caramelized pears, creamy feta, and crunchy pistachios. Sweet, savory, festive, and perfect for Thanksgiving or Christmas.
Ingredients
3 medium beets, roasted and sliced
2 ripe pears, sliced
1 tbsp butter
1 tbsp honey or maple syrup
4 cups mixed greens (spinach, arugula, or spring mix)
1/3 cup crumbled feta cheese
1/3 cup roasted pistachios
2 tbsp pomegranate seeds (optional)
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp Dijon mustard
1 tsp honey
Salt & pepper to taste
Instructions
1. Roast the beets at 400°F (200°C) for 45–60 minutes, or until fork-tender. Peel and slice.
2. In a skillet, melt butter and add pear slices. Cook 3–4 minutes until lightly caramelized, then drizzle with honey.
3. Prepare the dressing by whisking olive oil, balsamic vinegar, Dijon, honey, salt, and pepper.
4. Arrange the greens in a large bowl or platter.
5. Add sliced roasted beets and caramelized pears.
6. Sprinkle feta cheese, pistachios, and pomegranate seeds on top.
7. Drizzle with dressing just before serving.
Notes
Swap feta for goat cheese if you prefer extra creaminess.
Add grilled chicken to make it a full meal.
Use pre-cooked packaged beets to save time.
