Ingredients
2 lbs carrots, peeled and cut into sticks or diagonally sliced
2 tbsp olive oil
2 tbsp honey
1 tbsp melted butter
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp cinnamon (optional)
1 tsp fresh thyme or rosemary leaves
Fresh parsley for garnish
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a large bowl, whisk together olive oil, honey, melted butter, salt, pepper, and cinnamon (if using).
3. Add carrots and toss until evenly coated.
4. Spread carrots in a single layer on the baking sheet.
5. Roast for 25–30 minutes, turning halfway through, until tender and caramelized.
6. Remove from oven and sprinkle with fresh thyme or rosemary.
7. Transfer to a serving dish, garnish with parsley, and serve warm.
Notes
For extra depth, drizzle with a bit of balsamic glaze before serving.
