Ingredients
1 lb fresh green beans, trimmed
1 1/2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp honey (optional, for a touch of sweetness)
2 garlic cloves, minced
1/2 tsp salt
1/4 tsp black pepper
1/4 cup shaved Parmesan (optional)
Toasted almonds or pecans for garnish (optional)
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a large bowl, toss green beans with olive oil, balsamic vinegar, honey, garlic, salt, and pepper until evenly coated.
3. Spread green beans out in a single layer on the baking sheet.
4. Roast for 15–18 minutes, tossing halfway through, until tender and slightly caramelized.
5. Transfer to a serving platter and sprinkle with shaved Parmesan and toasted nuts if desired.
6. Serve warm and enjoy.
Notes
For extra flavor, drizzle with a bit more balsamic glaze before serving.
Make it vegan by skipping the Parmesan cheese.
