Ingredients
2 cups Brussels sprouts, halved
2 cups baby carrots
2 cups butternut squash, cubed
1 red bell pepper, chopped
1 red onion, cut into wedges
3 tbsp olive oil
1 tbsp maple syrup
1 tsp dried rosemary
1 tsp thyme
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
1. Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
2. In a large bowl, combine Brussels sprouts, carrots, squash, bell pepper, and onion.
3. Drizzle with olive oil and maple syrup, then sprinkle with rosemary, thyme, salt, and pepper.
4. Toss until evenly coated and spread in a single layer on the prepared baking sheet.
5. Roast for 25–30 minutes, stirring halfway through, until vegetables are tender and caramelized at the edges.
6. Remove from oven, transfer to a serving dish, and garnish with fresh parsley before serving.
Notes
Use a mix of colorful vegetables for the most festive presentation.
Add a drizzle of balsamic glaze or crumbled feta just before serving for extra flavor.
These vegetables can be roasted a few hours in advance and reheated before serving.
