Ingredients
2 medium sweet potatoes, washed and sliced into ½-inch rounds
2 tbsp olive oil
1 tbsp honey (or maple syrup for vegan option)
¼ cup pomegranate seeds (arils)
2 tbsp crumbled feta or goat cheese (optional)
1 tbsp chopped fresh herbs (mint or parsley)
Sea salt and black pepper, to taste
Optional garnish: drizzle of balsamic glaze or sprinkle of chili flakes
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Slice sweet potatoes into ½-inch thick rounds and arrange in a single layer on the baking sheet.
3. Brush both sides with olive oil and sprinkle with sea salt and pepper.
4. Roast for 20–25 minutes, flipping halfway through, until tender and lightly caramelized.
5. Remove from oven and drizzle with honey while still warm.
6. Top with pomegranate seeds, feta or goat cheese, and fresh herbs.
7. Transfer to a platter and finish with extra honey, balsamic glaze, or chili flakes if desired. Serve warm or at room temperature.
