These Roasted Sweet Potato Rounds with Honey & Feta are a beautiful blend of sweet, salty, and savory flavors tender roasted sweet potatoes topped with creamy feta, drizzled honey, and a sprinkle of herbs. Perfect as a side dish or elegant appetizer.
Ingredients
2 large sweet potatoes, peeled and cut into 1/2-inch rounds
2 tbsp olive oil
Salt and black pepper, to taste
1/3 cup crumbled feta cheese
2 tbsp honey
1 tbsp fresh thyme leaves (or rosemary)
Optional garnish: chopped pecans or parsley
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Arrange sweet potato rounds in a single layer on the baking sheet.
3. Brush both sides with olive oil and season with salt and pepper.
4. Roast for 20 minutes, flip, then roast an additional 10–15 minutes until tender and slightly caramelized.
5. Transfer to a serving platter and let cool slightly.
6. Top each round with crumbled feta and drizzle with honey.
7. Sprinkle with fresh thyme and optional garnishes.
8. Serve warm or at room temperature.
Notes
For extra crunch, broil the sweet potato rounds for the last 2 minutes of roasting.
Try adding a drizzle of balsamic glaze for more depth.
