These Roasted Veggie Glow Bowls are vibrant, hearty, and packed with plant-powered nutrition. Featuring caramelized vegetables, a grain base, and creamy tahini dressing, they’re perfect for clean eating without sacrificing flavor.
Ingredients
For the Bowl:
1 cup cooked quinoa or brown rice
1 cup sweet potato, peeled and cubed
1 cup broccoli florets
1 cup cauliflower florets
½ red onion, sliced
1 tablespoon olive oil
½ teaspoon garlic powder
Salt and pepper, to taste
¼ cup shredded carrots
¼ avocado, sliced
2 tablespoons pumpkin seeds or chopped nuts
For the Dressing:
2 tablespoons tahini
1 tablespoon lemon juice
1 teaspoon maple syrup or honey
1 clove garlic, minced
1–2 tablespoons warm water to thin
Instructions
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. Toss sweet potato, broccoli, cauliflower, and red onion with olive oil, garlic powder, salt, and pepper.
3. Roast for 25–30 minutes, stirring halfway, until vegetables are tender and caramelized.
4. Meanwhile, whisk together tahini, lemon juice, maple syrup, garlic, and water in a small bowl until smooth and pourable.
5. In a serving bowl, layer quinoa or brown rice as the base.
6. Top with roasted vegetables, shredded carrots, avocado, and seeds or nuts.
7. Drizzle generously with tahini dressing and serve warm or at room temperature.

Swap in any seasonal vegetables you have on hand.
Double the tahini dressing to use on salads throughout the week.
