- 1 pound ground beef
- 1 onion, finely chopped
- 1/2 cup breadcrumbs
- 1 egg
- 2 tablespoons Worcestershire sauce
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup beef broth
- 1 tablespoon ketchup
- 2 cups potatoes, peeled and chopped
- 1/4 cup milk
- 2 tablespoons butter
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the ground beef, onion, breadcrumbs, egg, Worcestershire sauce, salt, and pepper in a large mixing bowl until well blended.
- Shape the mixture into 1-inch meatballs and place them on a plate.
- Brown the meatballs in a skillet with heated olive oil for about 5-7 minutes on all sides.
- Transfer the browned meatballs into a baking dish and pour the beef broth and ketchup over them.
- Bake in the preheated oven for about 25 minutes.
- Prepare the mashed potatoes by boiling the chopped potatoes in salted water until tender, then draining.
- Mash the drained potatoes with milk, butter, garlic, and parsley until smooth and creamy, seasoning with salt and pepper.
- Serve the meatballs over the garlic herb mashed potatoes, drizzled with the baking sauce.
Notes
Serve with steamed vegetables or a green salad for a complete meal. Leftovers can be refrigerated for up to 3-4 days.
