Description
A one-pan Salsa Verde Chicken & Rice Skillet packed with zesty flavor, tender chicken, and fluffy rice.
Ingredients
1 lb boneless chicken thighs
1 cup long-grain rice
1 1/2 cups chicken broth
1 cup salsa verde
1 onion, diced
2 garlic cloves, minced
1 tbsp olive oil
1 tsp cumin
Salt & pepper to taste
Fresh cilantro & lime for garnish
Instructions
1. Season chicken with cumin, salt, pepper, and salsa verde.
2. Heat olive oil in a skillet and sear chicken on both sides.
3. Remove chicken, sauté onion and garlic.
4. Stir in rice, broth, and salsa verde.
5. Return chicken to skillet, cover, and simmer 20 minutes.
6. Let rest 5 minutes, garnish with cilantro and lime, then serve.
Notes
Adjust spice level with jalapeños or mild salsa verde.
Vegetarian option: swap chicken with chickpeas.
