Description
This easy sausage and veggies skillet is a one-pan wonder packed with flavor, protein, and color. Perfect for busy weeknights, meal prep, or quick lunches — all in under 30 minutes!
Ingredients
1 lb (450g) smoked sausage or chicken sausage, sliced into rounds
1 tbsp olive oil
2 bell peppers (any color), sliced
2 medium zucchinis, halved and sliced
1 cup corn kernels (fresh, frozen, or canned)
1/2 red onion, sliced
2 cloves garlic, minced
1 tsp Italian seasoning (or Cajun for a kick)
Salt & pepper, to taste
Optional: fresh parsley, chili flakes, squeeze of lemon or balsamic drizzle
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add sausage rounds and cook for 5–6 minutes, turning occasionally, until browned.
3. Add sliced red onion and garlic; sauté for 1 minute until fragrant.
4. Toss in bell peppers, zucchini, and corn.
5. Season with Italian seasoning, salt, and pepper. Stir well.
6. Cook for 8–10 minutes, stirring occasionally, until vegetables are tender-crisp.
7. Taste and adjust seasoning. Finish with optional garnishes: parsley, chili flakes, lemon, or balsamic.
8. Serve hot as-is or over rice, quinoa, or cauliflower rice.
Notes
Use pre-cooked smoked sausage for fastest prep.
Cajun seasoning adds heat; adjust to preference.
