These Sausage Egg and Cheese Breakfast Roll-Ups deliver the ultimate make-ahead breakfast solution—quick, cheesy, and protein-packed, perfect for busy mornings or feeding a crowd.
Ingredients
4 large eggs
1/4 cup milk
1/2 tsp salt
1/4 tsp black pepper
1 cup shredded cheddar cheese
6 fully-cooked chicken or turkey sausage links
1 package crescent dough or 6 small flour tortillas
1 tbsp butter (for brushing)
Optional: diced bell peppers, chopped chives
Instructions
1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Crack the eggs into a bowl, add milk, salt, and pepper, then whisk until combined.
3. Heat a skillet over medium heat and scramble the eggs until just set. Remove from heat.
4. Roll out the crescent dough or warm the tortillas slightly to make them pliable.
5. Layer scrambled eggs, cheese, and sausage on each dough piece or tortilla.
6. Roll tightly and place seam-side down on the baking sheet.
7. Brush each roll-up with melted butter.
8. Bake for 12–15 minutes or until golden brown.
9. Let cool for 3–5 minutes before serving.
Notes
Make-ahead tip: Freeze unbaked roll-ups and bake straight from frozen by adding 3–5 extra minutes.
Customize with your favorite vegetables or cheese blends.
