Description

A unique twist on the classic baked apple  these savory baked apples are stuffed with herbs, cheese, and breadcrumbs for a cozy side dish or light meal.


Ingredients

4 medium apples (such as Honeycrisp or Fuji)

1 tbsp olive oil

1/2 cup breadcrumbs

1/4 cup shredded sharp cheddar cheese

2 tbsp grated Parmesan cheese

1 tbsp chopped fresh thyme (or 1 tsp dried)

1 tbsp chopped fresh parsley

1 garlic clove, minced

1/4 tsp salt

1/4 tsp black pepper

1 tbsp butter, melted


Instructions

1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.

2. Cut the tops off the apples and scoop out the cores, leaving a 1/2-inch border.

3. In a bowl, combine breadcrumbs, cheeses, herbs, garlic, salt, pepper, olive oil, and melted butter.

4. Stuff each apple with the savory filling, pressing lightly to pack.

5. Arrange apples in the baking dish and cover with foil.

6. Bake for 25 minutes, then uncover and bake for an additional 10 minutes until golden and tender.

7. Serve warm as a side dish or savory snack.

Notes

Try adding cooked bacon bits or sausage for extra flavor.

Use firm apples so they hold their shape while baking.
