Ingredients
4 boneless skinless chicken thighs
8 corn tortillas
1 cup shredded cheese
2 tbsp olive oil
1 tsp chili powder
1 tsp cumin
½ tsp smoked paprika
½ tsp salt
¼ tsp black pepper
Toppings: lettuce, avocado, salsa, pico de gallo
Instructions
1. Preheat oven to 425°F (220°C).
2. Line sheet pan with parchment.
3. Toss chicken with oil and spices.
4. Arrange tortillas and chicken on sheet pan.
5. Roast chicken for 18–20 minutes until 165°F.
6. Top tortillas with cheese and bake 3 minutes.
7. Slice chicken, assemble tostadas, and add toppings.
Notes
Best with chicken thighs for juiciness.
Make vegetarian by swapping beans.
Serve with lime wedges for freshness.
