- 1 lb chicken breast (boneless and skinless, cut into 1 ½ inch pieces)
- 1 tablespoon dried parsley
- 2 teaspoons Italian seasoning
- 1 teaspoon minced garlic
- 1/2 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon pepper
- 2 lemons
- 5 tablespoons olive oil, divided
- 1 cup baby carrots (cut in halves)
- 1 1/2 cups baby golden potatoes (halved)
- 1 cup broccoli florets
- 1/2 tablespoon minced garlic (for broccoli)
Instructions
- Prepare the chicken: Pat the chicken breasts dry with a paper towel, cut into 1 ½-inch chunks, and place in a large bowl.
- Make the seasoning mix: Combine parsley, Italian seasoning, onion powder, paprika, seasoned salt, and pepper in a small bowl.
- Marinate the chicken: Add half the seasoning mix to the chicken with 2 tablespoons of olive oil, minced garlic, lemon zest, and juice; mix well and refrigerate for 30 minutes.
- Preheat the oven: Set the oven to 425°F (220°C).
- Prepare the vegetables: Line a baking sheet with parchment and cut baby carrots and potatoes; add them to the sheet.
- Season the vegetables: Drizzle with 2 tablespoons of olive oil and remaining seasoning mix, toss well.
- Roast the vegetables: Bake for about 20 minutes until tender.
- Prepare broccoli: Chop into bite-sized florets.
- Combine everything: Stir the carrots and potatoes, add broccoli with extra garlic, olive oil, and remaining seasoning mix.
- Add the chicken: Spread marinated chicken evenly across the pan.
- Finish roasting: Bake for another 15 to 20 minutes until chicken reaches 165°F (75°C).
- Broil for extra color (optional) for 1 to 2 minutes.
- Serve: Let rest before serving hot.
Notes
For best flavor, allow the chicken to marinate longer. Fresh herbs can enhance the taste.
