Description

A quick and healthy meal featuring tender chicken and fresh vegetables baked with Mediterranean flavors on one sheet pan.


Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 medium zucchinis, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • ½ cup shredded mozzarella cheese (or feta)
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Add the chicken pieces, zucchinis, cherry tomatoes, red onion, and garlic in a bowl.
  3. Drizzle olive oil over the mixture and sprinkle the oregano, basil, paprika, salt, pepper, and red pepper flakes; mix well.
  4. Spread the mixture evenly in the baking dish and top with mozzarella and Parmesan cheese.
  5. Cover with foil and bake for 20 minutes.
  6. Remove foil and bake for an additional 10–15 minutes until chicken is cooked through and cheese is golden.
  7. Garnish with chopped parsley before serving.

Notes

Ensure vegetables are cut evenly for consistent cooking. Can serve with rice, quinoa, or crusty bread.
