A quick and flavorful shrimp pasta packed with colorful vegetables and tossed in a light, garlicky sauce perfect for a speedy, satisfying meal on busy nights.
Ingredients
8 oz spaghetti or linguine
1 lb shrimp, peeled and deveined
2 tbsp olive oil
3 garlic cloves, minced
1 small zucchini, sliced
1 red bell pepper, sliced
1 cup cherry tomatoes, halved
1 cup baby spinach
1/4 cup grated Parmesan cheese
1 tbsp lemon juice
Salt and pepper to taste
1/2 tsp red pepper flakes (optional)
Fresh parsley for garnish
Instructions
1. Cook pasta according to package directions until al dente; drain and set aside.
2. In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
3. Add shrimp, season with salt and pepper, and cook until pink, about 2–3 minutes per side.
4. Remove shrimp and set aside.
5. In the same skillet, add zucchini, bell pepper, and cherry tomatoes; sauté until tender.
6. Return shrimp to the skillet, add spinach, and toss until wilted.
7. Add cooked pasta, lemon juice, and Parmesan; toss everything together until well coated.
8. Season with red pepper flakes if desired, garnish with parsley, and serve immediately.
Notes
Use whole wheat or gluten-free pasta for a lighter option.
Add a splash of white wine to the sauce for extra depth.
This dish tastes great hot or cold as a pasta salad the next day.
