- 8 oz orzo pasta
- 1 lb shrimp, peeled and deveined
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Begin by bringing a pot of salted water to a boil. Add 8 ounces of orzo pasta and cook according to the package instructions, approximately 8-10 minutes until al dente. Drain and set aside.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 3 cloves of minced garlic and sauté for 1-2 minutes until fragrant.
- Add 1 pound of shrimp to the skillet and cook for 3-4 minutes, stirring until the shrimp turns pink and opaque.
- Stir in 1 cup of halved cherry tomatoes and 2 cups of fresh spinach, cooking for an additional 2-3 minutes until the spinach wilts.
- Combine the cooked orzo with the skillet mixture, adding 1 teaspoon of lemon juice. Season with salt and pepper and stir until well combined and heated through.
- Serve hot, with optional Parmesan cheese sprinkled on top.
Notes
For added flavor, consider marinating the shrimp in olive oil, garlic, and chili flakes before cooking. Can be served family-style right from the skillet.
