Description

A quick and flavorful dish combining shrimp, fresh spinach, cherry tomatoes, and orzo pasta, perfect for weeknight dinners or impressing guests.


Ingredients

  • 8 oz orzo pasta
  • 1 lb shrimp, peeled and deveined
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Begin by bringing a pot of salted water to a boil. Add 8 ounces of orzo pasta and cook according to the package instructions, approximately 8-10 minutes until al dente. Drain and set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 3 cloves of minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add 1 pound of shrimp to the skillet and cook for 3-4 minutes, stirring until the shrimp turns pink and opaque.
  4. Stir in 1 cup of halved cherry tomatoes and 2 cups of fresh spinach, cooking for an additional 2-3 minutes until the spinach wilts.
  5. Combine the cooked orzo with the skillet mixture, adding 1 teaspoon of lemon juice. Season with salt and pepper and stir until well combined and heated through.
  6. Serve hot, with optional Parmesan cheese sprinkled on top.

Notes

For added flavor, consider marinating the shrimp in olive oil, garlic, and chili flakes before cooking. Can be served family-style right from the skillet.
