Description
Crispy shrimp tempura wrapped in seasoned sushi rice and nori, with creamy avocado and cucumber a restaurant-style sushi roll you can easily make at home.
Ingredients
2 cups cooked sushi rice
2 tbsp rice vinegar
1 tbsp sugar
1/2 tsp salt
4 sheets nori (seaweed)
8 shrimp, peeled and deveined
1/2 cup all-purpose flour
1/2 cup cornstarch
1/2 tsp baking powder
1/2 cup cold sparkling water
Vegetable oil for frying
1/2 cucumber, julienned
1 avocado, sliced
Soy sauce, for serving
Spicy mayo or eel sauce, for topping (optional)
Instructions
1. Prepare the sushi rice by mixing warm rice with rice vinegar, sugar, and salt. Let cool.
2. Pat shrimp dry and make small slits along the belly to keep them straight while frying.
3. In a bowl, mix flour, cornstarch, and baking powder. Add cold sparkling water and stir lightly until just combined.
4. Heat oil in a deep pan to 350°F (175°C). Dip shrimp in batter and fry until golden brown, about 2–3 minutes. Drain on paper towels.
5. Place a bamboo sushi mat on a clean surface and cover with plastic wrap. Lay a sheet of nori, shiny side down.
6. Spread an even layer of sushi rice over the nori, leaving 1 inch uncovered at the top edge.
7. Arrange 2 shrimp tempura, cucumber, and avocado slices along the bottom edge.
8. Using the mat, roll tightly away from you, pressing gently to seal.
9. Slice the roll into 8 pieces with a sharp, wet knife.
10. Drizzle with spicy mayo or eel sauce if desired, and serve with soy sauce.
Notes
Keep the batter cold for maximum crispiness.
Use short-grain sushi rice for the right texture.
Tempura shrimp can be prepared ahead and reheated in the oven before assembling rolls.
