Description
Soft Ricotta Almond Pillows are light, fluffy, and nutty treats perfect for gatherings or everyday indulgence.
Ingredients
1 cup whole milk ricotta (drained)
1 cup almond flour
3 tbsp honey or maple syrup
1 tsp vanilla extract
1/2 tsp ground cinnamon
Olive oil spray
Powdered sugar for dusting
Instructions
1. Preheat oven to 350°F (175°C).
2. Drain ricotta thoroughly.
3. Mix ricotta, almond flour, honey, vanilla, and cinnamon.
4. Scoop small portions and shape into pillows.
5. Place on lined baking sheet.
6. Bake 15–18 minutes until golden.
7. Cool 5 minutes and dust with sugar.
Notes
Do not overbake to keep them soft.
Store in an airtight container for up to 3 days.
Freeze dough for future baking.
