Ingredients
2 tbsp butter
1 small onion, chopped
2 garlic cloves, minced
2 cans (14.5 oz) crushed tomatoes
2 cups chicken or vegetable broth
1 tsp sugar
1/2 tsp salt
1/4 tsp black pepper
1/2 cup heavy cream
For croutons:
4 slices bread
2 tbsp butter
4 slices cheddar cheese
Instructions
1. Melt butter in a pot and sauté onion and garlic until soft.
2. Add tomatoes, broth, sugar, salt, and pepper.
3. Simmer for 20 minutes, then blend until smooth.
4. Stir in cream and heat through.
5. Make grilled cheese sandwiches: butter bread, add cheese, and cook until golden.
6. Cut sandwiches into small cubes.
7. Serve soup topped with grilled cheese croutons.
Notes
Add fresh basil for brightness.
For a smoky twist, use smoked cheddar.
