Description

A flavorful and satisfying wrap packed with tender grilled chicken, creamy southwest sauce, black beans, corn, and fresh veggies  the perfect grab-and-go meal bursting with Tex-Mex flavor.


Ingredients

2 large flour tortillas (10-inch)

2 cooked chicken breasts, sliced (grilled or rotisserie)

1/2 cup black beans, rinsed and drained

1/2 cup corn kernels

1/2 red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup shredded lettuce

1/2 cup shredded cheddar or pepper jack cheese

1/4 cup sour cream

1 tbsp mayonnaise

1 tsp lime juice

1/2 tsp chili powder

1/4 tsp cumin

Salt and pepper to taste

Olive oil or butter for toasting (optional)


Instructions

1. In a small bowl, whisk together sour cream, mayonnaise, lime juice, chili powder, cumin, salt, and pepper to make the southwest sauce.

2. Lay tortillas flat on a clean surface.

3. Spread a generous layer of the southwest sauce on each tortilla.

4. Layer sliced chicken, black beans, corn, bell pepper, red onion, lettuce, and shredded cheese evenly over each wrap.

5. Fold the sides in, then roll up tightly from the bottom to form a wrap.

6. (Optional) Heat a skillet over medium heat with a bit of olive oil or butter and toast each wrap seam-side down for 1–2 minutes per side until golden and crispy.

7. Slice in half and serve immediately with extra sauce or salsa for dipping.

Notes

Swap the sour cream with Greek yogurt for a lighter version.
