Ingredients
2 cups cooked shredded chicken (rotisserie or homemade)
1 cup black beans, rinsed and drained
1 cup corn kernels (fresh, canned, or roasted)
1 red bell pepper, diced
1/2 red onion, finely chopped
1 avocado, diced
1 cup cherry tomatoes, halved
4 cups chopped romaine or mixed greens
1/4 cup chopped cilantro
For the dressing:
3 tbsp olive oil
2 tbsp lime juice
1 tbsp honey
1 tsp chili powder
1/2 tsp cumin
Salt and pepper to taste
Instructions
1. In a large bowl, combine shredded chicken, black beans, corn, bell pepper, onion, avocado, tomatoes, greens, and cilantro.
2. In a small bowl or jar, whisk together olive oil, lime juice, honey, chili powder, cumin, salt, and pepper.
3. Pour the dressing over the salad and toss until everything is evenly coated.
