- 8 oz pasta (penne or fusilli)
- 2 tablespoons olive oil
- 1 pound chicken breast, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup heavy cream
- 2 tablespoons chipotle in adobo sauce
- Salt and pepper to taste
- Fresh cilantro for garnish
- Grated parmesan cheese for serving
Instructions
- Cook the pasta in boiling salted water until al dente, about 8-10 minutes. Drain and set aside.
- Prepare the chicken by sautéing diced chicken breast in olive oil until cooked through and golden brown, about 5-7 minutes.
- Sauté chopped onion and minced garlic in the skillet until the onion is translucent and the garlic is fragrant, about 3-4 minutes.
- Combine diced tomatoes and chipotle in adobo sauce in the skillet, then simmer for 5 minutes.
- Add heavy cream to the sauce and mix thoroughly. Simmer until the sauce thickens, about 3-4 minutes.
- Season with salt and pepper to taste.
- Mix the drained pasta into the sauce until well-coated.
- Serve garnished with fresh cilantro and grated parmesan cheese.
Notes
For a vegetarian version, replace chicken with diced bell peppers, zucchini, or mushrooms. For extra spice, add sliced jalapeños.
