Description

A light, protein-packed, spicy skillet meal with lean ground turkey, cauliflower rice, and bold seasonings  perfect for meal prep.


Ingredients

1 lb ground turkey

1 tbsp olive oil

1 small onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 jalapeño, minced (optional)

1 bag (12–16 oz) cauliflower rice

1 tbsp chili powder

1 tsp smoked paprika

1/2 tsp cumin

1/2 tsp red pepper flakes

Salt and pepper, to taste

2 tbsp soy sauce or coconut aminos

Juice of 1 lime

Fresh cilantro, for topping


Instructions

1. Heat olive oil in a skillet over medium heat.

2. Add ground turkey and cook until browned.

3. Stir in onion, garlic, bell pepper, and jalapeño; cook until softened.

4. Add cauliflower rice and cook 5–7 minutes until tender.

5. Season with chili powder, paprika, cumin, red pepper flakes, salt, and pepper.

6. Add soy sauce and lime juice, stir, and cook 2 minutes.

7. Serve with fresh cilantro and extra lime.

Notes

Use frozen cauliflower rice for quick prep.

Add sriracha for extra heat.

Great for meal prep and lasts 3–4 days in the fridge.

Swap turkey for chicken or beef if preferred.
