Ingredients
For the crust:
1½ cups (150 g) graham cracker crumbs
¼ cup (50 g) granulated sugar
6 tbsp (85 g) unsalted butter, melted
For the cheesecake filling:
24 oz (680 g) cream cheese, softened
1 cup (200 g) granulated sugar
3 large eggs
1 tsp vanilla extract
1 cup (240 ml) sour cream
For the spiderweb topping:
½ cup (85 g) semi-sweet or dark chocolate, melted
½ cup (85 g) white chocolate, melted
Instructions
1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan or line with parchment paper.
2. Mix graham cracker crumbs, sugar, and melted butter until well combined.
3. Press evenly into the bottom of the pan. Bake for 8–10 minutes. Let cool.
4. In a large bowl, beat the cream cheese until smooth.
5. Add sugar and mix until creamy.
6. Beat in eggs one at a time, then add vanilla and sour cream. Mix until smooth and fully combined.
7. Pour filling over the cooled crust. Smooth the top.
8. Bake for 50–55 minutes, until the edges are set and the center slightly jiggles.
9. Turn off oven, leave cheesecake inside with the door slightly open for 10 minutes, then remove and cool to room temperature.
10. Refrigerate cheesecake for at least 4 hours or overnight.
11. Drizzle melted chocolate over the top of the cheesecake in concentric circles.
12. Use a toothpick to drag lines from the center outward to form a spiderweb pattern.
13. Alternate with white chocolate for a more striking effect.
14. Carefully remove from springform pan, slice, and serve chilled.
