2 cups fresh spinach (or frozen, thawed & drained)

1 block feta cheese (8 oz), crumbled

1/2 cup sliced pepperoncini, drained

2 garlic cloves, minced

2 tbsp olive oil

1/2 tsp red pepper flakes

1 tsp lemon zest

2 tbsp chopped fresh parsley


Instructions

1. Preheat oven to 375°F (190°C).

2. Grease a small baking dish with olive oil.

3. Layer spinach, feta, pepperoncini, and garlic in dish.

4. Drizzle with olive oil, sprinkle with red pepper flakes.

5. Bake for 20–25 minutes until golden and bubbly.

6. Let rest 5 minutes before serving.

Notes
