Creamy Spinach Mushroom Gnocchi is a comforting, one-pan meal featuring pillowy gnocchi tossed in a luscious garlic cream sauce with tender mushrooms and spinach quick, cozy, and irresistibly delicious.
Ingredients
1 tbsp olive oil
2 tbsp butter
8 oz mushrooms, sliced
3 garlic cloves, minced
1 (16 oz) package potato gnocchi
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups baby spinach
Salt and black pepper to taste
Crushed red pepper flakes (optional)
Instructions
1. Heat olive oil and butter in a large skillet over medium heat.
2. Add sliced mushrooms and sauté until golden brown, about 5 minutes.
3. Add minced garlic and cook for 1 minute, until fragrant.
4. Add the gnocchi directly to the pan (uncooked) and pour in the heavy cream.
5. Stir and simmer for 5–7 minutes, or until the gnocchi is tender and the sauce thickens.
6. Add Parmesan cheese and stir until melted and creamy.
7. Fold in baby spinach and cook just until wilted.
8. Season with salt, black pepper, and red pepper flakes to taste.
9. Serve immediately, garnished with extra Parmesan if desired.
Notes
For extra flavor, add a splash of white wine or vegetable broth while cooking the mushrooms.
Substitute kale or arugula for spinach if preferred.
Use half-and-half for a lighter version or add a squeeze of lemon juice for brightness.
