Description
A refreshing Spinach Strawberry Salad with Pecans, paired with juicy grilled meats and drizzled in a citrus-herb dressing.
Ingredients
4 cups baby spinach
1 cup sliced strawberries
1/2 cup toasted pecans
1/4 cup thin-sliced red onion
1/4 cup crumbled feta (optional)
1 grilled chicken thigh or turkey tenderloin (sliced)
Citrus-Herb Marinade:
2 tbsp olive oil
1 tbsp lemon juice
1 clove garlic, minced
1 tsp chopped rosemary
Salt and pepper to taste
Dressing:
3 tbsp balsamic vinegar
3 tbsp olive oil
1 tsp honey or maple syrup
1 tsp Dijon mustard
Pinch of crushed red pepper (optional)
Instructions
1. Trim and pat dry your meat of choice. Dry-brine with salt for 30 minutes if using tougher cuts.
2. Marinate meat with citrus-herb blend for 15–30 minutes.
3. Grill chicken (6 min/side) or roast turkey at 375°F for 25 min.
4. Let cooked meat rest for 5–8 minutes, then slice.
5. In a large bowl, mix spinach, strawberries, onion, and pecans.
6. Whisk together all dressing ingredients until emulsified.
7. Add meat to salad and drizzle with dressing.
8. Toss gently and serve immediately.
Notes
Substitute protein with grilled tofu or halloumi for vegetarian version.
Use maple syrup instead of honey for vegan option.
Make it spicy with cayenne in the dressing.
