  • 1 cup whipped cream
  • ½ cup crushed pineapple
  • ½ cup coconut flakes

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare a 15×10-inch jelly roll pan.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Beat the eggs and granulated sugar together on high speed for about 5 minutes until thick and pale.
  4. Add the vanilla extract, milk, and vegetable oil into the egg mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet mixture, folding in gently with a spatula.
  6. Stir in a few drops of blue food coloring until the desired shade is achieved.
  7. Pour the batter into the prepared pan and bake for 15-20 minutes until a toothpick comes out clean.
  8. Cool the cake in the pan for 5 minutes, then flip onto a powdered sugar-dusted towel, peel off the paper, and roll up to cool completely.
  9. Mix the whipped cream, crushed pineapple, and coconut flakes for the filling.
  10. Unroll the cooled cake and spread the tropical filling evenly, then roll it back up tightly without the towel.
  11. Wrap the cake roll in plastic wrap and refrigerate for at least 1 hour.
  12. Decorate the cake with extra whipped cream, coconut flakes, or edible decorations.

Store leftovers wrapped in plastic wrap in the refrigerator for 3-5 days or freeze for up to 2 months.
