- 1 ½ cups graham cracker crumbs
- 6 tablespoons melted butter
- ¼ cup granulated sugar
- 16 oz full-fat cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups fresh strawberries, sliced
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 325°F (163°C).
- Prepare an 8×8-inch baking pan lined with parchment paper.
- In a medium bowl, combine graham cracker crumbs, melted butter, and ¼ cup granulated sugar. Mix until crumbly.
- Press the crust mixture into the bottom of the prepared pan.
- Bake the crust for 8–10 minutes, then let it cool slightly.
- In a large bowl, beat softened cream cheese until smooth and creamy.
- Add ½ cup sugar, eggs, and vanilla extract. Beat until fully combined.
- Pour the cheesecake filling over the cooled crust and spread evenly.
- In another bowl, toss sliced strawberries with 2 tablespoons sugar and lemon juice.
- Spoon the strawberry mixture over the cheesecake layer.
- Bake for 35–40 minutes until the center is slightly jiggly.
- Let it cool completely at room temperature.
- Chill in the refrigerator for at least 4 hours or overnight.
- Remove from the pan using parchment paper, slice, and serve!
Notes
Best served chilled, can be garnished with whipped cream and extra strawberries.
