Ingredients
8 graham cracker sheets (or rectangular biscuits)
4 oz cream cheese, softened
2 tbsp powdered sugar
1/4 cup whipped topping (or whipped cream)
1/2 tsp vanilla extract
1/3 cup diced fresh strawberries
Extra crushed graham crackers or white chocolate drizzle for topping (optional)
Instructions
1. In a small bowl, beat cream cheese and powdered sugar together until smooth and creamy.
2. Add whipped topping and vanilla extract; mix until light and fluffy.
3. Gently fold in diced strawberries until evenly distributed.
4. Lay out 4 graham cracker sheets and spread a thick layer of cheesecake filling on top of each.
5. Top with the remaining graham crackers to form sandwiches.
6. Place sandwiches on a tray and freeze for 30–45 minutes to firm up.
7. Serve chilled or frozen, optionally drizzled with melted white chocolate or dusted with crushed graham crackers.
