Description

Chocolate Covered Strawberry Cupcakes combine moist chocolate cake, a fluffy strawberry buttercream, and a chocolate-dipped strawberry topper  an elegant and indulgent dessert perfect for Valentine’s Day or any special occasion.


Ingredients

1 cup all-purpose flour

1 cup granulated sugar

1/2 cup unsweetened cocoa powder

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 cup milk

1/4 cup vegetable oil

1 large egg

1 tsp vanilla extract

1/2 cup hot water

For the Strawberry Buttercream:

1/2 cup unsalted butter, softened

2 cups powdered sugar

1/4 cup strawberry puree (fresh or frozen berries blended)

1/2 tsp vanilla extract

Pinch of salt

For the Chocolate Strawberries:

12 fresh strawberries

1/2 cup semisweet chocolate chips

1 tsp coconut oil or butter


Instructions

1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

3. Add milk, oil, egg, and vanilla. Mix until combined.

4. Slowly pour in hot water and stir until smooth (batter will be thin).

5. Divide batter evenly among liners, filling each about 2/3 full.

6. Bake 18–20 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.

7. Meanwhile, make the buttercream: beat butter until creamy. Gradually add powdered sugar, strawberry puree, vanilla, and salt. Beat until fluffy.

8. For the chocolate strawberries, melt chocolate chips and coconut oil together until smooth. Dip each strawberry, then place on parchment to set.

9. Pipe or spread strawberry frosting on cooled cupcakes.

10. Top each cupcake with a chocolate-covered strawberry.

Notes

Refrigerate cupcakes if not serving immediately — bring to room temperature before eating.

Add a touch of strawberry jam to the cupcake centers for extra flavor.

You can use freeze-dried strawberries for a more intense pink buttercream.
