Description
A rustic strawberry galette made with a flaky buttery crust and juicy fresh strawberries tossed in sugar and lemon simple, elegant, and perfect for showcasing seasonal fruit.
Ingredients
1 1/4 cups all-purpose flour
1 tbsp sugar
1/2 tsp salt
1/2 cup cold unsalted butter, cubed
3–4 tbsp ice water
3 cups fresh strawberries, hulled and sliced
1/3 cup granulated sugar
1 tbsp cornstarch
1 tsp lemon zest
1 tbsp lemon juice
1/2 tsp vanilla extract
1 egg, beaten (for egg wash)
1 tbsp coarse sugar (optional)
Instructions
1. In a bowl, whisk flour, sugar, and salt.
2. Cut in cold butter until mixture resembles coarse crumbs.
3. Add ice water one tablespoon at a time until dough comes together.
4. Form dough into a disk, wrap, and chill for 30 minutes.
5. Preheat oven to 400°F (200°C).
6. In another bowl, toss strawberries with sugar, cornstarch, lemon zest, lemon juice, and vanilla.
7. Roll chilled dough into a 12-inch circle on parchment paper.
8. Pile strawberry mixture into the center, leaving a 2-inch border.
9. Fold edges of dough over filling, pleating as needed.
10. Brush crust with egg wash and sprinkle with coarse sugar.
11. Bake for 35–40 minutes until crust is golden and filling is bubbly.
12. Cool slightly before slicing and serving.
Notes
Serve warm with vanilla ice cream or whipped cream.
You can substitute other berries or stone fruits.
Best enjoyed the day it’s baked, but leftovers keep well refrigerated.
