Description
Sweet heart-shaped strawberry ice cream sandwiches made with soft cookies and creamy strawberry ice cream a refreshing, romantic dessert perfect for warm days or special occasions.
Ingredients
2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
3/4 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
1/2 cup freeze-dried strawberries, crushed
1 1/2 quarts strawberry ice cream, slightly softened
Instructions
1. In a bowl, whisk together flour, baking soda, and salt.
2. In another bowl, cream butter and sugar until light and fluffy.
3. Beat in egg and vanilla extract.
4. Gradually mix in dry ingredients and crushed strawberries.
5. Chill dough for 30 minutes.
6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
7. Roll dough out and cut into heart shapes using a cookie cutter.
8. Bake for 10–12 minutes until edges are set; cool completely.
9. Scoop strawberry ice cream onto the flat side of one cookie and top with another.
10. Gently press to form sandwiches.
11. Freeze for 1 hour before serving.
Notes
Work quickly when assembling to prevent melting.
Chocolate or sugar cookies also pair well with strawberry ice cream.
Wrap individually and freeze for make-ahead treats.
