Description
This no-bake Strawberry Icebox Cake is light, creamy, and bursting with fresh strawberries! Layers of graham crackers, whipped cream, and sweet berries soften together into a dreamy, sliceable dessert perfect for summer gatherings.
Ingredients
2 cups heavy whipping cream
1/3 cup powdered sugar
1 tsp vanilla extract
1 lb fresh strawberries, hulled and sliced
1 box (about 14 oz) graham crackers
Fresh mint or extra strawberries for garnish (optional)
Instructions
1. In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
2. Spread a thin layer of whipped cream on the bottom of a 9×13-inch baking dish.
3. Arrange a single layer of graham crackers over the cream, breaking pieces to fit as needed.
4. Spread 1/3 of the whipped cream evenly over the graham crackers.
5. Top with a layer of sliced strawberries.
6. Repeat the layers (graham crackers, whipped cream, strawberries) two more times, finishing with strawberries on top.
7. Cover and refrigerate for at least 4 hours, or overnight, to allow the crackers to soften.
8. Garnish with fresh mint or extra strawberries before serving.
9. Slice and enjoy chilled.
Notes
For extra flavor, add a drizzle of strawberry sauce or crushed freeze-dried strawberries between layers.
Use chocolate or cinnamon graham crackers for a fun twist.
Can be made 1–2 days ahead — the texture gets even better as it chills.
