Ingredients
1 sponge cake or vanilla Swiss roll
1 cup whipped cream or mascarpone
1 tbsp honey or agave
1 tsp vanilla extract
1 cup fresh strawberries, thinly sliced
Powdered sugar (optional)
Instructions
1. Trim cake edges and lay flat on parchment paper
2. Mix cream, honey/agave, and vanilla until smooth
3. Spread cream mixture evenly over the cake
4. Line one edge with strawberries
5. Carefully roll the cake into a tight log using the parchment
6. Chill in the fridge for 10–15 minutes
7. Slice into sushi-sized rounds and garnish as desired
Notes
Pat strawberries dry to prevent sogginess.
Use a sharp serrated knife for clean slices.
