Description

A delightful and wholesome dish inspired by Mexican street food, combining grilled chicken, creamy avocado, and fresh veggies over a bed of rice.


Ingredients

  • 1 cup cooked rice
  • 2 grilled chicken breasts, sliced
  • 1 cup sweet corn (fresh or canned)
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/4 cup cilantro, chopped
  • 1 avocado, sliced
  • 1 lime, juiced
  • Salt and pepper to taste
  • Olive oil for grilling

Instructions

  1. Heat olive oil in a grill pan over medium-high heat. Season chicken breasts with salt and pepper.
  2. Grill the chicken for 6 to 7 minutes on each side until fully cooked. Let rest and then slice.
  3. In a large bowl, combine cooked rice, sliced chicken, sweet corn, onion, bell pepper, and cilantro. Stir gently.
  4. Add lime juice and mix well to coat.
  5. Serve in bowls topped with sliced avocado and additional cilantro if desired.
