Ingredients

- 1 cup cooked rice
- 2 grilled chicken breasts, sliced
- 1 cup sweet corn (fresh or canned)
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1/4 cup cilantro, chopped
- 1 avocado, sliced
- 1 lime, juiced
- Salt and pepper to taste
- Olive oil for grilling
Instructions
- Heat olive oil in a grill pan over medium-high heat. Season chicken breasts with salt and pepper.
- Grill the chicken for 6 to 7 minutes on each side until fully cooked. Let rest and then slice.
- In a large bowl, combine cooked rice, sliced chicken, sweet corn, onion, bell pepper, and cilantro. Stir gently.
- Add lime juice and mix well to coat.
- Serve in bowls topped with sliced avocado and additional cilantro if desired.
