Description
These Stuffed Chicken Tenderloins are tender, juicy, and bursting with creamy flavor. Each tenderloin is filled with a delicious blend of cream cheese, spinach, and herbs, then baked or pan-seared until golden. Perfect as a main course with vegetables, rice, or a light salad.
Ingredients
1 lb (450 g) chicken tenderloins or thin chicken breast fillets
4 oz (115 g) cream cheese, softened
1 cup fresh spinach, chopped
1/2 cup shredded mozzarella or provolone cheese
2 cloves garlic, minced
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp Italian seasoning
Toothpicks (for securing)
Optional garnish: chopped parsley or grated Parmesan
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a bowl, mix the cream cheese, chopped spinach, shredded mozzarella, garlic, salt, pepper, and Italian seasoning until well combined.
3. Place each chicken tenderloin on a cutting board and gently flatten if needed.
4. Spoon about 1 tablespoon of filling onto each piece of chicken, then roll up tightly and secure with a toothpick.
5. Heat olive oil in an oven-safe skillet over medium heat.
6. Sear the chicken rolls on all sides until lightly golden, about 2–3 minutes per side.
7. Transfer the skillet to the preheated oven and bake for 15–20 minutes, or until the chicken is cooked through (internal temperature 165°F / 74°C).
8. Remove toothpicks, garnish with parsley or Parmesan, and serve warm.
Notes
You can replace spinach with finely chopped kale, sun-dried tomatoes, or mushrooms.
For extra flavor, wrap each roll in a thin slice of prosciutto or bacon before baking.
Serve with roasted vegetables, mashed potatoes, or a fresh salad.
This recipe can also be made in an air fryer (12–15 minutes at 375°F).
